Recipe: Roasted Garlic and Tomato Soup

Here is a delicious recipe that you should definitely try for the upcoming chilly fall days!  I have a good amount of tomatoes from my garden and I wanted some new ideas to use my garden produce.  My sister gave me this recipe and it was so fun and quite easy!

Roasted Garlic and Tomato Soup


2 1/2 lbs. tomatoes
Wash, core and cut in halves.
2 small yellow onions
Dice the onion.
6 garlic cloves 
Remove the skin and leave whole.
Drizzle with 1/2 cup olive oil and generously add salt and pepper.


Transfer to a baking sheet. Bake for 25-30 minutes - until the onions begin to carmelize.


My tomatoes were so beautiful!


Transfer from the baking sheet to a stock pot.  Add 1 quart of chicken stock, 2 bay leaves and 4 tsp. butter.  Bring to a boil, reduce heat and simmer 15-20 minutes.


Take out bay leaves.  Transfer to a blender or food processor.  Puree and return to a second, smaller pot.  (You will have to puree in 2-3 batches.)


Turn onto a medium heat.


Add 3/4 cup of heavy whipping cream and 1/2 cup chopped basil or dried basil (that is what I used).


To go with the soup, I made grilled cheese paninis.  Take French bread and cut in half.  Butter on the outside.


Add cheddar or colby cheese...grill in your George Foreman...and you have a delicious fall meal!

If you have enough to make a second batch, you can freeze this very easily.  Just do not add the cream before you freeze.  When you reheat, add the cream.

Simple Fall Centerpieces Using Pantry Items


A few fall centerpieces I found on Pinterest.  All you need for the first one is:
Popcorn
Red beans
Green split peas
Place your candle in the center.  Layer each item.  You can choose different
colors to coordinate with your home and fall decor.  
Add twine and you are finished!


I love the colors of this one...perfect for October, 
candy corn and all the pumpkin decor!

Great white northern beans
Red lentils

Add a fun bow and it is done! :)

The Fragrance of Christian Influence-Part 7

Continuing our study of influence...

Our sixth and final thought:  Dress to influence.

I know...God looks on the inside...but guess who is looking on the outside?  Yep, those who you are influencing.  And even though there are those who love you just the way you are...whether we have on our make-up, our hair done and our high heels on...let's not make that excuse.

We are a representative of our Lord!  We are a child of the King of Kings.  So...I think that makes me a princess. :)  I would love to be a princess in this life.  I love to watch the Queen of England.  Always proper, always representing her kingdom well.  I am pretty sure I have never seen the Queen out shopping at the grocery store in her pajama pants and slippers with no make-up!  She dresses appropriately for the occasion...always a lady...always a leader by her example.

As a pastor's wife, I want to be aware that I am an example to the ladies of our church.  I am the image that visitors may judge our church on.  Imagine that!  They will look to see if I am wearing make-up, if I am wearing a fashionable yet modest outfit, if my hair is styled.  I don't want visitors to whisper to their friend and say..."THAT'S the pastor's wife???"  LOL!  I am being silly but very honest.  It is part of my responsibility as a daughter of our KING to represent Him well.

And it is your responsibility to represent Him as well!  Never take that lightly.  I am not saying that when you are at home relaxing or cleaning the house, that you have to be dressed in your Sunday best.  But how about Sundays?  Do you wear your flip flops and jean skirt with your hair pulled back into a ponytail?  Or do you take time to care for your appearance?  

Isn't there a sweet fragrance...a breath of fresh air...when you see a young lady dressed modestly, appropriately and they look like a daughter of our King?  Let us remember that we can emit that same sweet fragrance to others when we dress to influence.

Wear make-up.  Style your hair and do it every day.  Update your wardrobe.  Dress appropriately for the occasion.  Add accessories.  

My 9 yr. old daughter has caught this lesson. :)  Every day, she dresses in her little outfits, fixes her hair, and even puts on her jewelry.  We don't go anywhere...we home school.  Yet, she puts on her best.  She is a challenge to me on those days where I want to say...I don't really need to put on my make-up, I really don't need to do my hair.  I love that she is an example for me!

Let us be challenged to do the same!  Let us represent our King!

Continuing our study of influence...

Fifth Thought:  Be patient with people.  Growth does not come instantly, but slowly and steadily.

God is so patient with me.  I know I have so many flaws and consistently disappoint Him.  Yet, He is patient and loving...always giving the second chance.

I want to remember to do the same with others.  No one is exactly like me...and that is not how God designed it.  Tap into the strengths of others and you will soon find that if everyone is being used for their strengths...the entire body of the church or home or circle of friends will be stronger as a whole.

Love that person for who they are...as they are...with no changes.  And you will never go wrong.

And as you accept them, you will be a sweet fragrance of influence to others.

The Fragrance of Christian Influence-Part 5

Continuing our study of influence...

Our fourth thought:  Do not begin by correcting everything you observe that is wrong in their lives. Do not attempt to initiate a relationship by immediately calling attention to their dress, language, recreational activities, political orientation, etc.

First, influence them by example.  Make the outside a pleasing fragrance to smell...the way you dress, the way you talk, your smile.

I think of Mrs. Marlene Evans.  She was one of my teachers in Bible college before cancer took her to Heaven.  She was one of the most loud, boisterous, out-going ladies I have known. She had a booming voice that could be heard across the room. But she learned how to bridle that energy.  Her "loud" mouth was not abrasive to her hearer's ears.  She changed it to become a sound of encouragement, happiness and joy.
The way others see you on the outside...does it permeate a pleasant fragrance...or do they move away when they see you because of the overbearing stench of "let me correct your flaws"?

Second, watch for open doors.  You don't have to break them down. :)  If they have a spark of interest towards the things of God, they will comment or ask questions.  This is especially true of teen girls and ladies.  Sometimes in our eagerness to influence, we barge through doors that aren't open.  Just wait...let the fragrance of God through you float in the room and influence others before you even open your mouth. :)

Continuing our study on influence...

Third thought:  Don't be know-it-all.  No one is...but a few think they are. ;)  You can hardly influence others when you act as if you know everything about everything.

I honestly don't know too many people like this.  But once in awhile, you do run into someone that goes on and on about their area of expertise.  LOL!  Just remember that no matter our area of expertise, we are always able to keep on learning and become better in that area.  We have never "arrived" at our intended destination...we are simply always on a journey.

Folks will flock to you if they know you are not perfect...that you do not know it all...that you are just like them.  A person with struggles.  Yet, the fragrance of influence comes when they see that you are not content with just struggling and letting the struggles overtake you.  You work and overcome your struggles!  Then you will be an influence for good to others!!

The Fragrance of Christian Influence-Part 3

What is another thing we need to consider on the topic of influence?

Second thought:  When engaged in conversation with others, do not dominate the scene.

Show folks you value what they say.  My husband often quotes, "People want to know how much you care before they care how much you know."  I don't really care to be around people who dominate the scene.  I have been to dinners where I sit quietly and the conversation is dominated by two people at the table.  I walk away and honestly, I really don't care to talk with that person again.  Yes, I would like my conversation to be valued by others...so I must value their conversation.

How can you influence others?  When in a group, if you see the conversation is dominated by one person, interject kindly and ask another person a question.  It is our job to see that no one person is left on the "outside".  
And if you happen to be the domineering conversationalist, put a lock on your mouth.  Remember to ask more questions of those around you than giving opinions to those around you.

Does it seem that not many ladies in the church group seem to befriend you?  Does it seem that those under your influence (Sunday School, teen girls, etc.) do not care to be around you?
Perhaps you are sending off the stench of domination and your fragrance of influence is being overwhelmed by that stench.

Let's take our influence to the next level!

The Fragrance of Christian Influence-Part 2

What are some things we need to consider on the topic of influence?

Today's thought: Try to cultivate a genuine interest in people.  Learn their first names.  Ask about their families.  Pray for their prayer requests.

In order to really get to know people, you must spend individual time with them.  I may see the same lady in church every Sunday morning...but I may know nothing more than her name.  How can I influence her for good if I do not take an interest into her life?  

So then she may come to my ladies Bible study which is held once a month...she may attend a ladies activity.  Even though the group number is smaller, I still may not connect with her a deeper basis.

The Lord then pricked my heart to spend more one-on-one time with my church ladies.  So I try to choose two different ladies each week and either meet them (separately) for coffee or lunch and spend that individual time with them.

And I am blessed by this time!  It has been one of the greatest decisions I have made as a pastor's wife in my personal area of ministry.  

Who would you like to influence?  
Are you a Sunday School teacher?  Perhaps you can take out a student a week for a Happy Meal or an ice cream cone.  Talk to them on their level.  They will enjoy that personal, special time with their teacher!
Do you work with teenagers?  One of the greatest tools you can use to influence a teen girl is to simply care and listen.  Even though we may think all teens want is fun and excitement...sometimes all they want is a listening ear and your time alone.
What about the Senior Saints of your church?  What about the shut-ins of your church and community?  They would absolutely love a cup of coffee and one-on-one with you.
What about a single mom?  A working mom?  

When those folks know you genuinely care, they will be drawn to you.  Your influence will be a sweet fragrance to them.

There are so many folks for you to influence.  The first step of influence is to cultivate a genuine interest in those around you!

The Fragrance of Christian Influence-Part 1

Today, I want to start a short devotional series on the topic of influence.  I myself want to have the greatest godly influence I can on others around me.  I know many of you want to do the same.  Each day, I will post another thought on the subject of influence.

What is influence?  It is the ability to produce an effect without apparent force or direct authority.  Some people, because of their personalities, have a greater influence than others.  Don't be fooled! You can have a godly impact on the lives of others just by being the person that God made you.  

Exerting influence is a skill...an art form.  Every Christian needs to study more about how to influence others for good.  

Just as a plant yields fragrance into the atmosphere around it, so you will exert influence into the lives of those around you. 
 Influence is the effect that your life has on another without them realizing it.  
Look at your life right now.  Do others enjoy being around you?  Is the influence that your life exerts a pleasant fragrance to others?  Or is it a stench that pushes others away?  

I pray that this devotional will be a blessing to you as we look into this needed topic!

Blessings To Start The Week

Monday's Blessings...

The work on our truck has been finished!  My husband was able to pick it up after work.  The transmission had to be rebuilt; however, we went through a very reputable company in Reno - A-1 - and were very pleased.  I can not truly describe how nice it is to be a two vehicle family again!  

We had our monthly youth worker's meeting in our home as well.  We have two outstanding couples that work with the youth of our church.  To keep everyone happy, I feed them for our meeting. :)  Last night's menu was fried chicken (to make it easy - I bought that at the deli), crockpot mac-n-cheese and corn.  For dessert, I had peanut butter cupcakes with chocolate frosting and Shannon made an angel food cake with a caramel apple topping with vanilla ice cream.  With dinner, we had sweet tea and with dessert, coffee.

Tuesday's Blessings...

Eye doctor appt. for Addie at 9:10am.
Deposit a few checks at the bank.
Oil change at Just Brakes with my Groupon.  Only $11!
Hospital visit to Miss Pam McFarlin.  She is Papa Vern's daughter from church.  She has cancer and is currently going through chemo treatments every week.  However, she had a few seizures and they are not sure what is causing them - so they are keeping her in the hospital for a few days.
Home for our home school day.  I did grading and such while the girls watched their videos.

Baked two zucchini-onion pies with zucchini from our neighbor's garden.


We are still having very summery weather...looks like a little bit of fall won't hit until the actual first day of fall. :)  The next three days are to be 90-91 degrees.

Tomorrow is a very full day!  I hope your week is going well too!

Recipe: Veggie Beef Paninis

This is the second part to the recipe:  
Sweet & Savory Slow-Cooked Beef.

So you try this recipe and you have leftovers of the meat...how do you turn this meal into another meal without your family sighing about having the same meal over again?

Make this!

Veggie Beef Paninis

Combine mayo and ranch dressing.  Spread on sliced French bread.  Add a few slices of cheddar or colby cheese.  Slice and saute green peppers and onions.  Layer on your bread.  Add reheated beef.  Toast sandwiches on a panini maker or indoor George Foreman grill.



Serve with dill pickles and you have a super delicious sandwich!  All I had to buy was the bread and green pepper.  And your husband may not even realize he is eating leftovers. ;)

Recipe: Sweet & Savory Slow-Cooked Beef

Here is a new recipe I made.  Usually because of the amount of meat that a recipe like this makes, I usually only make it for larger groups or company.  However, this recipe will be followed by two more recipes that you can make with the leftover meat!  I love that...nothing goes to waste, you make two meals out of one cut of meat and no one is tired of the leftovers!  :)


This recipe is wonderful because you should have most of the ingredients already in your pantry/fridge.  It is also wonderful for the fall...put it in the crockpot in the morning and supper is done!

Sweet & Savory Slow-Cooked Beef

1 beef top round roast (4 lbs)
1 bottle (18 oz) barbecue sauce
1/2 cup water
 1/4 cup brown sugar
1 chipotle pepper in adobo sauce, chopped
2 tbsp. steak sauce
1 1/2 tsp. soy sauce
1 tsp. celery salt
1 tsp. garlic salt
1 tsp. seasoned salt
1 tsp. pepper
16 kaiser buns

Cut roast in half; place in a 6 qt. slow cooker.  Combine all other ingredients together.  Pour over meat.

Cover and cook on low for 8 hours or until meat is tender.  Shred meat with two forks and stir together in the sauce.  Serve on buns.

*Notes:  I used two peppers for a little more "heat" in our meat. :)  
I served this on kaiser buns, dill pickles on the side along with crockpot mac-n-cheese.  Enjoy!
This recipe freezes well up to 3 months.

Tidbits From My Week

Wow...what a week!  It was jam-packed with all kind of good things.
I caught Summer playing restaurant while the girls were in school. :)  She made this and was bringing it to me.  So sweet!

I was able to get caught up on Monday with all the little things here and there around the house.  Even though my husband was gone, the day seemed to fly by.

Tuesday...made two batches of peanut butter cookies...picked up Eric from the airport...visited a friend in the hospital who had her baby girl - Olivia...then after dinner and baths...had coffee with a friend at Starbucks.

Wednesday...I had an appointment that lasted the morning...picked up my husband from work.  He performed a funeral for a church family whose father had passed away.  We then attended the fellowship after the service.

Thursday...we finally were able to take our truck in to have the transmission rebuilt!  Grilled burgers for dinner.  In the evening, I had an hour to do couponing/shopping by myself.  Another plus! :)

Friday...we attended the air races...had another afternoon appointment...and had a church family over for dinner.  Ending the tiring day with Shark Tank.
The cars lined up on our street that leads to our neighborhood.  Busy day at the air races. :)

Saturday...church visitation in the morning...lunch with one of my church ladies...visited another church friend who had their baby and was in the hospital (yes, a different one - must be a good week for babies!)...then home. Hubby worked on all the lawn work - mowing, weed control, etc. Made a batch of peanut butter and chocolate cupcakes for Summer's birthday, paninis for dinner and a large beef potpie casserole for Sunday's dinner.

A great end to a great week. :)
