Hosting a brunch...Tips and Hints
For those who may be interested in some tips for hosting a breakfast or brunch for a group - here is what I learned.
1. I created a sign-up sheet. Each individual or family needed to sign up and how many people in their group/family. This gave me a fairly accurate count for the meal.
2. I planned the menu. Plan a variety of items - but not too many that you cannot do all things well...plan for items you can prepare the day before if possible...plan hot and cold items.
3. I set up the serving and seating areas/tables early in the week.
-Tablecloths, cups, plasticware, napkins, condiments, serving utensils.
4. We do not have a kitchen in our church building. We have a few cupboards, a small counter space and one sink. So to keep things warm for the meal without ovens, stoves, etc...I utilize the inexpensive steamer sets. It is basically a wire basket with places to set the little burners. You then use a tray with water in it and then place your pans of food on top of the steamer trays. They work very well and kept all my food nice and warm. I purchased ours at Sam's Club.
5. This is the breakdown on preparation for the food:
Biscuits and gravy
I purchased the pre-made sausage gravy in one gallon cans at Sam's Club. All I had to do in the morning was to open and heat in two crockpots. The biscuits: I purchased in packs of 36 - Pillsbury Homestyle Buttermilk. You bake for 20 minutes each batch and they turn out to be the huge beautiful homemade looking biscuits! Be aware - it took me until almost 2am to bake ALL the biscuits because each batch takes 20 minutes...so start early. :) Before serving, I warmed them on the steamer tray and they were delish!
Sausage and Egg Burritos
These are fairly simple to do - a little time consuming. However, I received a multitude of compliments on my burritos and I was kind of amused. Why? It is simply eggs, sausage and cheese rolled in a tortilla. LOL! However, I never turn down a cooking compliment so yay for me! Even though there were leftovers, even the leftover burritos were all taken home! Another yay for me! LOL!
Fry your sausage - drain. Let cool.
Scramble your eggs. You can do 12 - 18 eggs at one time. Let cool.
Add the amount of sausage you prefer to your bowl of eggs. For convenience, you can purchase the foil squares. They really make the rolling process quicker. Or you can use regular foil.
*I think the key of preparing these the night before is cooling the filling. Then there is no heat and steam to make the tortilla soggy.
Roll each tortilla with your egg/sausage mixture and shredded cheddar cheese. I reheated in the oven the next morning for 30-45 minutes (depending on how many you have) and then kept warm in the steamer. Serve with salsa and Tabasco sauce.
Hearty Breakfast Egg Casseroles
This is a simple casserole that is prepared the night before then baked in the morning. Since I could not bake the casseroles myself, I prepared them and delivered them to several ladies in the church who baked them for me and brought them to church. Yum!
I also served a variety of donuts that I purchased the night before - glazed, powdered, plain cake and chocolate cake donuts. I also served two fruit bowls with a medley of frozen fruits - peaches, strawberries, blueberries, etc. For drinks: coffee, milk and orange juice.
I was very pleased with the day. This was my first time preparing and cooking for a group of 60 - my largest so far. It was a blessing to serve this brunch on the Lord's birthday for all the people I love and care for - my church family. :)

A Christmas Miracle
Quite awhile back...my husband asked me to take his truck and get the oil changed, the tires rotated and aligned. His tires were wearing down on just one side and he thought perhaps it was because of the alignment. He has very large tires and are not inexpensive so he was worried if we didn't take care of it...that we would have to get new tires.
I took it to a tire place only to have them tell me they would not align it...much less even rotate the tires. They also gave me an estimate of what repairs would need to be done on the truck to fix our problem. The estimate: $1,600.
Well, since we just didn't have $1,600 to throw into repairs...we just let it be. There wasn't anything else we could do about it. Well, except stress. And that is what my hubby did.
Recently, my husband left his dome light on overnight and the next morning, we couldn't get it jumped. Finally, after the second day, we got it running again.
Not sure if something else was wrong, we asked a man from our church, Bro. Al, if he would look at it. Tonight, we stopped by Bro. Al's to pick up our repaired truck. Bro. Al said, "It is literally a miracle that you drove it the week before you brought it to me. I don't know how you even made it to my house...if you would have literally hit a speed bump...your tires would have came right off. It is just a miracle."
I know that good things happen to good people. Also bad things happen to good people. But I felt that God was saying to me in a very personal way..."Rebekah, you are living right and you put Me first. You don't give Me excuses. I like that. I want to show you that I recognize your love for Me not with just your words but with your actions. I want to take care of you. My angels held your truck together to keep your family safe. And I gave you an earthly angel to fix your truck - for less than $100 in parts. You are loved."
This is my special blessing this Christmas week. :)

Sunday Blessings
Mrs. Lisa Maxwell, one of our Sunday School helpers, stepped in for one of our teachers who was out of town for her anniversary. This was her first time teaching in the Junior age class and she did so very well! I know she was nervous but did a great job. (I am the Sunday School nursery worker...so I get the opportunity to listen to the children's classes as well. ;) I am grateful for ladies like Lisa who are willing to step out of their comfort zone and give to others what has been given to them. Love you Lisa!
Also, since my husband was in Boise last week, a man from our church, Bro. Al, was willing to take a look at his truck. We have been having some problems with it but it is 15 years old. LOL! He told my husband last night...I don't know how you got your truck to my house. If you would have even hit a speed bump, the tires might have came off...that's how bad it is.
Thank God for His hand of protection to us! But I am not surprised. He is a good God and He takes care of His children. :)

Ways To Simplify Your Christmas

Ways To Simplify Your Christmas:
1. Recognize other events throughout the year instead of focusing on “the big one”. Instead of sending out Christmas cards, send out Easter or Thanksgiving cards.
2. The annual family portrait doesn’t have to be a holiday affair. Take advantage of other family activities: Reunions, birthdays, vacations, big events of your year.
3. If you are part of a group that usually exchanges gifts, think about alternatives. Such as exchanging photos or services-such as babysitting.
4. Adopt a needy group, missionary, family or charity instead of giving to one another.
5. Arrange to have your holiday parties in public places so there is no preparation or clean up.
6. Combine purposes by making your party into a gift-wrapping, cookie-baking or decorating party.
7. Go bowling, miniature golfing or skating and enjoy the getting together instead of the preparation.
8. Do something for others such as caroling or volunteering at the homeless shelter – then go out for a warm drink at the local coffeehouse afterwards.
9. Make a special effort to remember and include those who are experiencing their first holiday after losing a loved one.
10. If you choose to give, make it your goal to give at least one item that expresses Christ’s love, whether in word or deed. Then increase your personal quota each year.
11. Don’t be tempted to put something on a credit card and call it a gift. You really don’t own it and you can’t give what doesn’t belong to you.
12. Divide your list into paydays and purchase items throughout the year. Each time you shop, try to buy one gift. Buy out of season…when things are on clearance after the season is over.
13. Give things to lesson someone else’s holiday stress: a book of stamps, wrapping paper, gift bags, tree lights.
14. Buy from home service companies that deliver to your home.
15. Save time and postage by selecting and purchasing out of town gifts at chain stores that allow the recipient to pick up the gift at a location near them.
16. If you make gifts, mass-produce them. For example: a jar of home-canned apple butter or a special bookmark. In doing this, you can buy supplies in quantity and focus on doing one thing well.
17. Pass along something of yours.
18. Shop odd places: Garage sales, antique stores, thrift stores.
19. Take the talent you have and give that talent to others: Sewing, quilting, knitting/crocheting, baking, canning, photo taking, decorating, etc.
20. Make an effort to do kindnesses every day.
Volunteer at the food bank, offer to babysit for a single parent or a busy couple, visit the nursing home, help carry someone’s groceries, offer your place in line at the grocery store, smile at a stranger.

Recipe: No-Drippings Gravy

- 2
- cups Progresso® chicken broth (from 32-oz carton) or homemade turkey broth
- 2
- teaspoons chicken bouillon granules
- Dash of pepper
- 1/4
- cup Gold Medal® all-purpose flour
- Browning sauce, if desired
- 1In 1-quart heavy saucepan, heat 1 1/2 cups of the broth, the bouillon granules and pepper over medium heat, stirring constantly, until bouillon granules are dissolved.
- 2In small bowl, stir remaining 1/2 cup broth and the flour, using wire whisk, until smooth. Gradually stir flour mixture into broth in saucepan. Heat to boiling. Cook, stirring constantly, until thickened and bubbly. Stir in a few drops of browning sauce if a darker color is desired.
